ITC Hotels has announced the appointment of Gaurav Lavania as Executive Chef at ITC Maurya. In his new role, he will lead the hotel’s culinary operations, overseeing its portfolio of award-winning restaurants as well as banquet services.
Chef Lavania brings over 25 years of experience in the hospitality sector, with expertise across multiple locations in India. His responsibilities will include managing kitchen operations, enhancing dining concepts, and maintaining the property’s culinary standards.
Focus on culinary excellence and sustainability
Known for his approach of deriving flavours from simple ingredients while maintaining authenticity, Lavania combines traditional techniques with contemporary presentation. His culinary philosophy emphasises sustainable sourcing and the promotion of indigenous Indian culinary traditions.
Prior to this appointment, he was part of the leadership team at ITC Narmada. Over the years, he has contributed to several restaurants within the ITC Hotels portfolio, including Yi Jing, Dakshin, The Pavilion, Fabelle, and Peshawri, gaining recognition for culinary innovation and excellence.
At ITC Maurya, he will oversee both fine dining and large-scale banquet operations, further strengthening the hotel’s positioning as a leading culinary destination.
